Taquitos

Ingredients
  • ½ lb cooked and shredded meat of choice (I used some left over deep pit bbq)
  • 8-10 tortillas
  • oil for frying (canola, vegetable, peanut)(not olive oil)
  • toppings of choice (sour cream/creama, lettuce, cheese (I used cotija cheese), cabbage, chopped tomatoes, chopped green onion, etc.)
Instructions
  1. Add enough oil to a frying pan so it is about 1.5 inches deep. Put oil over medium-high heat. If your oil starts to smoke, it is too hot.
  2. While the oil is heating up, soften the taquitos. Cook them over medium high heat for a couple of minutes on each side. Put between two rags or paper towels for a few minutes while cooling and softening.
  3. Add about a ⅓ cup of meat in the middle of each tortilla and roll it up. Secure tortilla with a toothpick at the seam.
  4. When the oil has reached 375 degrees F, add 3-4 taquitos to the oil. (I never use a thermometer. I usually flick a few drops of water into the oil. If it starts to sputter right a way, then the oil is ready. Just be careful when doing this because the hot oil might sputter on you!)
  5. Fry the taquitos for a few minutes on each side. When they are slightly golden brown and firm, take them out and place them on a plate with paper towels. Let them drain and cool for a few minutes. TAKE OUT THE TOOTHPICKS BEFORE EATING!
  6. Top the taquitos with your favorite toppings and enjoy!
